Cheesy Cheddar Melt Bacon & Mushroom Sandwich

Cooking time: 15 – 20 minutes

Ingredients:

  • 4 slices thick-cut bread of your choice
  • 2 Tbsp butter
  • 8 slices of cooked bacon
  • 1 cup of sliced mushrooms
  • 1 Tbsp olive oil
  • 1 small garlic clove, minced
  • ¼ tsp dried thyme or fresh thyme leaves
  • Salt and pepper, to taste
  • ½ cup caramelised onions
  • 1 cup shredded cheddar cheese, grated
  • ¼ cup spring onion & chives cream cheese

How To Make Cheesy Cheddar Melt Bacon & Mushroom Sandwich

  1. In a skillet over medium heat, cook the bacon until crispy, about 4–5 minutes per side.
  2. Once done remove from the pan and set aside.
  3. In the same skillet, add the olive oil and minced garlic over medium heat.
  4. Sauté for 1–2 minutes until fragrant.
  5. Add the mushrooms and thyme.
  6. Cook until the mushrooms are softened and browned, about 5–6 minutes.
  7. Season with salt and pepper to taste, then set aside.
  8. Heat a separate pan or griddle over medium-low heat.
  9. Butter one side of each slice of bread.
  10. On the other side spread a generous amount of cream cheese, then layer with bacon, cooked mushrooms, grated cheese and caramelised onions.
  11. Top with the other slice of bread, grill in pan for about 4 minutes on each side until the bread is crispy and cheese has melted.
