
Cheesy Cheddar Melt Bacon & Mushroom Sandwich

Cooking time: 15 – 20 minutes
Ingredients:
- 4 slices thick-cut bread of your choice
- 2 Tbsp butter
- 8 slices of cooked bacon
- 1 cup of sliced mushrooms
- 1 Tbsp olive oil
- 1 small garlic clove, minced
- ¼ tsp dried thyme or fresh thyme leaves
- Salt and pepper, to taste
- ½ cup caramelised onions
- 1 cup shredded cheddar cheese, grated
- ¼ cup spring onion & chives cream cheese
How To Make Cheesy Cheddar Melt Bacon & Mushroom Sandwich
- In a skillet over medium heat, cook the bacon until crispy, about 4–5 minutes per side.
- Once done remove from the pan and set aside.
- In the same skillet, add the olive oil and minced garlic over medium heat.
- Sauté for 1–2 minutes until fragrant.
- Add the mushrooms and thyme.
- Cook until the mushrooms are softened and browned, about 5–6 minutes.
- Season with salt and pepper to taste, then set aside.
- Heat a separate pan or griddle over medium-low heat.
- Butter one side of each slice of bread.
- On the other side spread a generous amount of cream cheese, then layer with bacon, cooked mushrooms, grated cheese and caramelised onions.
- Top with the other slice of bread, grill in pan for about 4 minutes on each side until the bread is crispy and cheese has melted.
