
Harissa & Roasted Baby Marrow Picnic Sandwich
The perfect balance of spicy, smoky, and creamy and the best part is it’s quick to prepare and full of flavour.

Ingredients:
- 4 – 6 baby marrows, cut into thick strips
- 1 Tbsp olive oil
- Salt and pepper, to taste
- 2 Tbsp harissa paste
- 1 Tbsp lemon juice
- 2 Tbsp Greek yogurt
- 1 Tbsp fresh coriander, chopped
- 4 slices sourdough bread, or any bread of your choice, toasted
- A handful of fresh rocket or lettuce
To serve:
- Feta cheese, crumbled
How To Make Harissa & Roasted Baby Marrow Picnic Sandwich
- Preheat your oven to 200°C.
- Place the sliced baby marrows on a baking sheet, drizzle with olive oil, and season with
salt and pepper. - Toss them to coat evenly.
- Roast in the preheated oven for 20-25 minutes, or until they are golden and slightly crispy on the edges.
- You can flip them halfway through to ensure even roasting.
- In a small bowl, mix the harissa paste, Greek yogurt, lemon juice and coriander until well combined.
- To assemble the sandwich, spread some harissa yoghurt sauce on each slice of bread, then layer the roasted baby marrow, feta cheese and lastly fresh rocket, then top with the remaining slice of bread.
- Once the sandwich is assembled, wrap it tightly in with baking paper.
