Cheesy Bacon, Pea and Onion Tart

Ingredients:

  • 1 roll all-butter ready-rolled puff pastry
  • 1 red onion
  • 1 tsp olive oil
  • 100g smoked bacon, cubed
  • 200g plain creamed cottage cheese
  • handful of mint, basil and chives, chopped, plus extra whole leaves to serve
  • 1 egg
  • 30g finely grated parmesan
  • 1 teaspoon garlic powder
  • 100g frozen peas, defrosted

How To Make Cheesy Bacon, Pea and Onion Tart

  1. Heat oven to 200°C or 180°C if fan forced.
  2. Unroll the pastry and place onto a large, flat baking sheet.
  3. Score about 1cm from the edge, all around. Don’t cut all the way through. Poke the middle all over with a fork.
  4. Bake for about 15 minutes, just until pastry is brown and puffed up.
  5. While that cooks, roughly chop your onion and fry in some olive oil and seasoning.
  6. Add the bacon and fry until cooked to your liking. Set aside to cool.
  7. Mix cottage cheese, herbs, half of the parmesan and the garlic powder together with the egg. Season well.
  8. Gently push the centre of the tart shell down.
  9. Spread the cheese mix over the top.
  10. Scatter the bacon, onion, and peas all over.
  11. Sprinkle on the left-over parmesan. Bake for another 10 minutes.
  12. Top with remaining whole herbs and serve!
