Cheesy Bacon, Pea and Onion Tart

Ingredients:
- 1 roll all-butter ready-rolled puff pastry
- 1 red onion
- 1 tsp olive oil
- 100g smoked bacon, cubed
- 200g plain creamed cottage cheese
- handful of mint, basil and chives, chopped, plus extra whole leaves to serve
- 1 egg
- 30g finely grated parmesan
- 1 teaspoon garlic powder
- 100g frozen peas, defrosted
How To Make Cheesy Bacon, Pea and Onion Tart
- Heat oven to 200°C or 180°C if fan forced.
- Unroll the pastry and place onto a large, flat baking sheet.
- Score about 1cm from the edge, all around. Don’t cut all the way through. Poke the middle all over with a fork.
- Bake for about 15 minutes, just until pastry is brown and puffed up.
- While that cooks, roughly chop your onion and fry in some olive oil and seasoning.
- Add the bacon and fry until cooked to your liking. Set aside to cool.
- Mix cottage cheese, herbs, half of the parmesan and the garlic powder together with the egg. Season well.
- Gently push the centre of the tart shell down.
- Spread the cheese mix over the top.
- Scatter the bacon, onion, and peas all over.
- Sprinkle on the left-over parmesan. Bake for another 10 minutes.
- Top with remaining whole herbs and serve!
