
Cheesy Chili Beef Burritos
Hearty, cheesy, and packed with bold flavours, ticking all the boxes of your cravings!

Ingredients:
- 500g ground beef mince
- 1 Tbsp oil
- 1 small onion, finely chopped
- 3 garlic cloves, minced
- 1 tsp cumin
- 1 tsp smoked paprika
- ½ tsp chili powder
- ½ tsp oregano
- ½ tsp salt
- ½ tsp black pepper
- 1 Tbsp tomato paste
- 1 cup crushed tomatoes
- ½ cup beef stock or water
- 1 cup canned black beans, drained and rinsed
- 1 cup corn kernels
For the Burritos:
- 4-6 large flour tortillas
- 2 cups shredded cheddar cheese
- ½ cup sour cream
- ½ cup salsa
- ½ cup fresh cilantro, chopped
- 1 jalapeño, sliced (optional)
How To Make Cheesy Chili Beef Burritos
- Heat oil in a large skillet over medium heat.
- Add chopped onions and sauté for 2-3 minutes until soft.
- Add minced garlic and cook for another 30 seconds.
- Add ground beef and cook until browned, breaking it up as it cooks.
- Drain excess fat if needed.
- Stir in spices and seasoning.
- Add tomato paste, crushed tomatoes, and beef stock.
- Stir well and let simmer for 15-20 minutes until thickened.
- Stir in black beans and corn and cook for another 5 minutes.
- Remove from heat.
- Lay out a flour tortilla and spread a spoonful of sour cream in the centre.
- Add a generous scoop of chili beef filling on top.
- Sprinkle shredded cheese over the beef.
- Add salsa, coriander, and jalapeños.
- Fold in the sides of the tortilla, then roll it up tightly from the bottom.
- Heat a clean skillet over medium heat.
- Place the burrito seam-side down and cook for 1-2 minutes until golden brown and crispy.
- Flip and toast the other side.
- Serve hot with extra salsa, sour cream, or guacamole on the side.
Chefs Tip: Warm the tortillas slightly before rolling to prevent cracking.
Don’t overfill! Too much filling makes them hard to roll and more likely to fall apart.
