Cheesy Chili Beef Burritos

Ingredients:

  • 500g ground beef mince
  • 1 Tbsp oil
  • 1 small onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • ½ tsp chili powder
  • ½ tsp oregano
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 Tbsp tomato paste
  • 1 cup crushed tomatoes
  • ½ cup beef stock or water
  • 1 cup canned black beans, drained and rinsed
  • 1 cup corn kernels

For the Burritos:

  • 4-6 large flour tortillas
  • 2 cups shredded cheddar cheese
  • ½ cup sour cream
  • ½ cup salsa
  • ½ cup fresh cilantro, chopped
  • 1 jalapeño, sliced (optional)

How To Make Cheesy Chili Beef Burritos

  1. Heat oil in a large skillet over medium heat.
  2. Add chopped onions and sauté for 2-3 minutes until soft.
  3. Add minced garlic and cook for another 30 seconds.
  4. Add ground beef and cook until browned, breaking it up as it cooks.
  5. Drain excess fat if needed.
  6. Stir in spices and seasoning.
  7. Add tomato paste, crushed tomatoes, and beef stock.
  8. Stir well and let simmer for 15-20 minutes until thickened.
  9. Stir in black beans and corn and cook for another 5 minutes.
  10. Remove from heat.
  11. Lay out a flour tortilla and spread a spoonful of sour cream in the centre.
  12. Add a generous scoop of chili beef filling on top.
  13. Sprinkle shredded cheese over the beef.
  14. Add salsa, coriander, and jalapeños.
  15. Fold in the sides of the tortilla, then roll it up tightly from the bottom.
  16. Heat a clean skillet over medium heat.
  17. Place the burrito seam-side down and cook for 1-2 minutes until golden brown and crispy.
  18. Flip and toast the other side.
  19. Serve hot with extra salsa, sour cream, or guacamole on the side.

Chefs Tip: Warm the tortillas slightly before rolling to prevent cracking.
Don’t overfill! Too much filling makes them hard to roll and more likely to fall apart.
