Spicy Mango Margarita Sorbet

Beat the heat with this show stopper of a treat!

Ingredients:

  • 2 large mangoes or 2 ½ cups frozen mango
  • 1/3 cup granulated sugar
  • 1/4 cup water
  • 1/4 cup lime juice
  • 1/4 cup non-alcoholic tequila
  • Kosher salt
  • For Spicy Strawberry Jam
  • 1/4 cup strawberry jam
  • 1 tsp tajin spice

To serve:

  • Tajin spice

How To Make Spicy Mango Margarita Sorbet

  1. Freeze a big mixing bowl.
  2. Peel and slice mango.
  3. In a food processor or blender, puree mango until smooth.
  4. Measure out 1 cup of puree and transfer to a large bowl.
  5. Add sugar, water, tequila, lime juice and a pinch of salt and whisk until sugar dissolves.
  6. Chill for 1 hour in the refrigerator, or 20 minutes in the freezer, stirring every 5 minutes to prevent the mixture from freezing.
  7. Next move onto the spicy strawberry jam.
  8. Whisk together jam and tajin in a small bowl.
  9. Taste and add more tajin if desired.
  10. Freeze mango mixture until the texture of soft serve, likely around 20 minutes.
  11. Transfer the sorbet into a resealable container, alternating scoops of sorbet with tablespoons of the jam mixture.
  12. When everything has been transferred to the container, use a butter knife to swirl two mixtures together.
  13. Cover and freeze until solid, about 4 hours.
  14. Serve topped with the jam mixture and tajin spice if desired.

Chefs Tip: Use ripe mangoes, the sweeter and juicier your mangoes, the better the sorbet. If using frozen mango, let them thaw slightly before blending for a smoother texture. 

Make sure all your ingredients are chilled, keep everything cold, from the mixing bowl to the puree, helps the sorbet freeze evenly and prevents large ice crystals from forming.
