Chicken Shawarma

Craving takeout but want something homemade, healthier, and just as delicious? This is for you!

 

Ingredients:

For the chicken + marinade:

  • 1 kg boneless, skinless chicken thighs or breasts
  • 3 Tbsp plain yogurt
  • 3 Tbsp olive oil
  • Juice of 1 lemon
  • 4 garlic cloves, minced
  • 1½ tsp ground cumin
  • 1½ tsp ground paprika
  • 1 tsp ground coriander
  • 1 tsp ground turmeric
  • ½ tsp ground cinnamon
  • ½ tsp cayenne pepper
  • 1½ tsp salt
  • ½ tsp black pepper

To serve:

  • Warm pita bread or flatbread
  • Garlic sauce or tahini sauce
  • Sliced cucumbers, tomatoes, lettuce, pickles, red onions
  • Fresh parsley or mint (optional)

How To Make Chicken Shawarma

  1. In a large bowl or zip-top bag, mix all marinade ingredients until well combined.
  2. Add chicken and coat evenly.
  3. Cover and refrigerate for at least 2 hours, or preferably overnight for maximum flavour.
  4. Preheat grill to medium-high.
  5. Grill chicken 5–7 minutes per side, or until nicely charred and fully cooked.
  6. Let the chicken rest for 5 minutes, then slice thinly or chop into bite-sized pieces.
  7. Stuff sliced chicken into pita or wraps with your favourite toppings and drizzle with garlic sauce or tahini.
  8. Serve with rice or salad.
