  • 1 garlic clove (minced)

  • 1 cup rice
  • 1½ cups chicken stock
  • 1 tsp smoked paprika
  • ½ tsp cayenne pepper
  • 1 tsp cumin
  • Salt & pepper (to taste)

How To Make Chicken Skewers and Spicy Rice

  1. For the chicken skewers, marinate the chicken in olive oil, lemon juice, garlic, smoked paprika, cumin, chili powder, salt, and pepper for about 30 minutes.
  2. Once marinated, thread the chicken, cherry tomatoes, and bell pepper chunks onto skewers.
  3. Brush with Mrs. Balls Chutney, then cook the skewers by grilling, pan-frying, or baking in the oven for 10–12 minutes, turning occasionally and basting with more chutney as they cook.
  4. For the spicy rice, heat olive oil in a pan and sauté the onion, garlic, and red bell pepper until softened.
  5. Add the rice, smoked paprika, cayenne pepper, cumin, chicken stock, and salt and pepper.
  6. Bring it to a boil, then reduce the heat and simmer for around 15 minutes or until the rice is cooked and tender.
  7. Fluff the rice with a fork and serve alongside the chicken skewers.
