
Chicken Skewers and Spicy Rice
A delicious, hearty dish that’s perfect for those cold winter holiday nights!
Serves: 4 people
Prep Time: 20 minutes (including marinating time)
Cooking Time: 12 – 15 minutes (grilling or frying pan)
Ingredients:
For the Chicken Skewers:
- 500g chicken (cut into chunks)
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 2 garlic cloves (minced)
- 1 tsp smoked paprika
- 1 tsp cumin
- ½ tsp chili powder
- Salt & pepper (to taste)
- Cherry tomatoes
- 1 bell pepper (cut into chunks)
- 1 cup Mrs. Balls Chutney
For the Spicy Rice:
- 1 tbsp olive oil
- ½ onion (chopped)
- 1 garlic clove (minced)
- 1 red bell pepper (diced)
- 1 cup rice
- 1½ cups chicken stock
- 1 tsp smoked paprika
- ½ tsp cayenne pepper
- 1 tsp cumin
- Salt & pepper (to taste)
How To Make Chicken Skewers and Spicy Rice
- For the chicken skewers, marinate the chicken in olive oil, lemon juice, garlic, smoked paprika, cumin, chili powder, salt, and pepper for about 30 minutes.
- Once marinated, thread the chicken, cherry tomatoes, and bell pepper chunks onto skewers.
- Brush with Mrs. Balls Chutney, then cook the skewers by grilling, pan-frying, or baking in the oven for 10–12 minutes, turning occasionally and basting with more chutney as they cook.
- For the spicy rice, heat olive oil in a pan and sauté the onion, garlic, and red bell pepper until softened.
- Add the rice, smoked paprika, cayenne pepper, cumin, chicken stock, and salt and pepper.
- Bring it to a boil, then reduce the heat and simmer for around 15 minutes or until the rice is cooked and tender.
- Fluff the rice with a fork and serve alongside the chicken skewers.
