Kimchi & Mushroom Grilled Sandwich
Comfort food with a twist, a grilled sandwich bursting with bold flavour!

Ingredients:
- 4 slices Sunbake Sourdough bread
- 1 cup sliced mushrooms (e.g., portobello, brown, or oyster)
- ½ cup well-drained kimchi, roughly chopped
- 1 cup grated mozzarella or mature cheddar (or a mix)
- 1 tbsp butter (plus more for grilling)
- 1 tsp soy sauce
- 1 tsp sesame oil (optional)
- Fresh spring onion or coriander, chopped (optional garnish)
How To Make Kimchi & Mushroom Grilled Sandwich
- Sauté the mushrooms: In a pan over medium heat, add 1 tbsp butter.
- Sauté the mushrooms for 4–5 minutes until golden.
- Add soy sauce (and sesame oil if using), then stir in chopped kimchi.
- Cook for another 2 minutes until heated through.
- Set aside.
- Assemble the sandwiches: Butter one side of each slice of sourdough.
- Place 2 slices buttered-side down on a board.
- Layer with half the cheese, then the mushroom-kimchi mixture, then the remaining cheese.
- Top with the other slices, buttered-side up.
- Grill it: Heat a non-stick pan over medium-low heat.
- Grill the sandwiches for 3–4 minutes per side or until the bread is golden and the cheese is melted.
- Serve: Slice in half, garnish with spring onion or coriander if desired, and enjoy warm.
