Chicken Souvlaki Skewers

Mediterranean spread: simple ingredients, endless pleasure!

Prep Time: 30 minutes (plus 30 minutes marinating)
Cook Time: 25–30 minutes
Serves: 4–6

Ingredients:

For the Chicken Skewers:

  • 800g boneless skinless chicken thighs, cubed
  • 3 tbsp olive oil
  • Juice of 1 lemon
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp paprika
  • ½ tsp ground cumin
  • 1 tsp salt
  • ½ tsp black pepper

Easy Flatbreads:

  • 2 cups cake flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup plain yoghurt
  • 1 tbsp olive oil

Tzatziki:

  • 1 cup plain Greek yoghurt
  • ½ cucumber, grated & squeezed dry
  • 1 clove garlic, finely grated
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill or mint, chopped
  • Salt to taste

Roasted Babaganoush:

  • 2 large brinjals (eggplants)
  • 2 tbsp olive oil
  • 1 tbsp tahini
  • Juice of ½ lemon
  • 1 small garlic clove
  • Salt to taste

Tomato, Lettuce & Red Onion Salsa:

  • 2 ripe tomatoes, diced
  • ½ small red onion, finely sliced
  • 1 cup shredded lettuce
  • 1 tbsp olive oil
  • 1 tbsp red wine vinegar or lemon juice
  • Salt & pepper

How To Make Chicken Souvlaki Skewers with Easy Flatbreads, Tzatziki & Roasted Babaganoush

  1. Marinate the Chicken
  2. Combine olive oil, lemon juice, garlic, oregano, paprika, cumin, salt and pepper.
  3. Toss chicken through marinade and chill for at least 30 minutes (or up to overnight).
  4. Thread onto skewers.
  5. Roast the Babaganoush
  6. Prick brinjals and roast whole at 200°C for 25–30 minutes until collapsed and soft.
  7. Scoop out flesh and blend with olive oil, tahini, lemon juice, garlic and salt until smooth.
  8. Chill until serving.
  9. Mix flour, baking powder and salt.
    Stir in yoghurt and olive oil to form a soft dough.
  10. Divide into 6 balls, roll thin, and cook in a hot dry pan for 1–2 minutes per side until puffed and lightly charred.
  11. Keep covered in a clean towel.
  12. Mix all ingredients together and refrigerate until needed.
  13. Grill on a hot braai, grill pan or oven (200°C) for 10–12 minutes, turning until golden and cooked through.
  14. Spread flatbread with babaganoush, add chicken, spoon over tzatziki, and top with tomato, lettuce and red onion salsa.
  15. Fold and serve immediately.
