Lamb Stew with Fluffy Dumplings
Happiness is a bowl of stew and dumplings made with love.

Serves: 4–6
Ingredients:
For the Stew:
- 800g stewing lamb pieces
- 2 tbsp flour
- Salt & black pepper
- 2 tbsp oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 potatoes, cubed
- 1 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- 2 cups beef stock
- 1 tsp dried thyme
- 1 bay leaf
For the Dumplings:
- 1 cup cake flour
- 2 tsp baking powder
- ½ tsp salt
- 2 tbsp cold butter, cubed
- ½ cup milk
How To Make Lamb Stew with Fluffy Dumplings
- Brown the lamb. Toss beef in flour, salt and pepper.
- Heat oil in a large pot and brown the beef in batches. Remove and set aside.
- Build the Base. In the same pot, sauté onion and garlic until soft.
- Stir in tomato paste and cook for 1 minute. Simmer Return beef to the pot. Add carrots, potatoes, Worcestershire sauce, thyme, bay leaf and stock.
- Bring to a boil, then reduce heat. Cover and simmer gently for 1½ hours, until beef is tender.
- Make the Dumplings Mix flour, baking powder and salt.
- Rub in butter until crumbly.
- Stir in milk to form a soft dough.
- Drop spoonfuls of dough directly onto the simmering stew.
Cover with a lid and cook for 15 minutes without lifting the lid (this traps steam and makes them fluffy!).
