Chilli Cheese Flatbreads
You can adjust the chilli, but don’t skimp on the cheese!

Serves: 4
Time: 40 minutes
Ingredients:
- 200g self-raising flour
- 150g plain yogurt
- 100g mozzarella cheese, grated
- 2 spring onions, sliced
- 2-4 tbsp onion chilli crunch
- 4 tbsp butter
- 2 garlic cloves, minced
- Handful coriander, chopped
- 1 tsp Maldon salt
How To Make Chilli Cheese Flatbread
- Add flour and yogurt to a bowl and combine till soft dough ball comes together.
- Adding more flour if needed, the dough should not be sticky.
- Knead until smooth then set aside to rest for 20 minutes.
- Divide the dough in 4, then flatten out into circles.
- Spread chilli oil in the centre, sprinkle some spring onion and top with a bit of mozzarella.
- Fold the edges of the dough over the filling, pinch to seal then flatten slightly
- Heat a non-stick pan to medium heat, cook the flatbreads on a dry pan until golden on both sides.
- In a small saucepan, melt the butter on low heat then add the garlic. Cook gently for 30 secs-1 minute.
- Remove from the heat and add the coriander and salt.
- Serve the flatbreads drizzle with garlic butter & extra onion chilli crunch.
