Chilli Cheese Flatbreads

You can adjust the chilli, but don’t skimp on the cheese!

Serves: 4
Time: 40 minutes

Ingredients:

  • 200g self-raising flour
  • 150g plain yogurt
  • 100g mozzarella cheese, grated
  • 2 spring onions, sliced
  • 2-4 tbsp onion chilli crunch
  • 4 tbsp butter
  • 2 garlic cloves, minced
  • Handful coriander, chopped
  • 1 tsp Maldon salt

How To Make Chilli Cheese Flatbread

  1. Add flour and yogurt to a bowl and combine till soft dough ball comes together.
  2. Adding more flour if needed, the dough should not be sticky.
  3. Knead until smooth then set aside to rest for 20 minutes.
  4. Divide the dough in 4, then flatten out into circles.
  5. Spread chilli oil in the centre, sprinkle some spring onion and top with a bit of mozzarella.
  6. Fold the edges of the dough over the filling, pinch to seal then flatten slightly
  7. Heat a non-stick pan to medium heat, cook the flatbreads on a dry pan until golden on both sides.
  8. In a small saucepan, melt the butter on low heat then add the garlic. Cook gently for 30 secs-1 minute.
  9. Remove from the heat and add the coriander and salt.
  10. Serve the flatbreads drizzle with garlic butter & extra onion chilli crunch.
