Chocolate Brownie Bars
Brownies with a rich, fudgy centre with just the right amount of chew!
Preparation Time: 15 minutes
Cooking Time: 25–28 minutes
Cooling Time (before slicing): 30–45 minutes
Ingredients:
- 1 cup Nola Original Mayonnaise
- 1¼ cups caster sugar
- ½ cup brown sugar (for chewiness)
- 1 tsp vanilla essence
- ¾ cup unsweetened cocoa powder
- ½ cup all-purpose or cake flour
- ½ tsp salt
- 150g dark chocolate (melted and slightly cooled)
- ½ cup chocolate chips (optional)
How To Make Chocolate Brownie Bars
- Preheat oven to 180°C and line a 20cm square pan with baking paper.
- In a large mixing bowl, whisk together the mayonnaise, both sugars, and vanilla until smooth.
- Stir in the melted dark chocolate until fully combined.
- Sift in the flour, cocoa powder, and salt.
- Mix gently until a thick batter forms.
- Fold in chocolate chips, if using.
- Spread the batter into the pan and smooth the top.
- Bake for 25–28 minutes, until the edges are set but the centre still has a slight wobble (do not overbake!).
- Cool completely before slicing into dense, fudgy squares.
