Spicy Roasted Red pepper & Tomato Pasta
Can never go wrong with a pasta dish!

Ingredients:
For the pasta:
- 2 large tomatoes
- 1 red pepper
- 1/2 onion
- 1 chili
- 1 tsp butter
- 1 tsp red chili flakes
- 1 TBSP tomato paste
- 1 tsp fresh thyme
- 1 TBSP of fresh basil
- 1 TBSP of fresh parsley
- Salt and pepper to taste
- 1 TBSP Olive oil
- 250ml long life cream
- 1/4 cup grated cheddar cheese
- 1/4 cup grated Parmesan cheese
- 400g cooked pasta
How To Make Spicy Roasted Red pepper & Tomato Pasta
- Slice your tomato, peppers and onion in half and place onto a baking sheet along with your chili.
- Cover with olive oil, smoked chili flakes, salt and pepper and place into the air fryer at 200 degrees for 15 minutes or until roasted and golden.
- In a blender, add 200ml of cream along with your roasted vegetables, tomato paste and blend until smooth.
- In a heated pan, add butter along with garlic and thyme.
- Sauté for 30 seconds and then add in your blended roasted red pepper and tomato soup.
- Mix well then add fresh basil and 50ml of cream.
- Once this comes to a light simmer add in cheddar cheese and allow your cheese to melt.
- Add salt and pepper to taste.
- Now you can add in your cooked pasta along with fresh parsley and Parmesan cheese.
- Once your sauce starts sticking to your pasta you can plate up, serve and enjoy!
