Churro Ice Cream Sandwich

Ingredients:
- For the churro dough:
- 1 cup water
- 1/2 cup unsalted butter
- 1 tablespoon granulated sugar
- 1/4 teaspoon salt
- 1 cup all-purpose flour
- 2 large eggs
- 1/2 teaspoon vanilla extract
- For the coating:
- ½ cup granulated sugar
- 1 tsp ground cinnamon
- For the macerated strawberries:
- 1 cup fresh strawberries, sliced
- 1-2 tablespoons granulated sugar
- To serve:
- Ice-cream, of your choice
- Macerated strawberries
How To Make Churro Ice Cream Sandwiches
- Preheat oven to 180°C and line a baking tray with baking paper.
- In a medium saucepan, combine water, butter, sugar, and salt.
- Bring to a boil over medium heat. Once boiling, add the flour all at once and stir continuously until the mixture pulls away from the sides of the pan and forms a ball, about 1-2 minutes.
- Remove from heat and allow the dough cool slightly, then add eggs one at a time, mixing well after each addition.
- Stir in vanilla extract until smooth. Transfer the dough to a piping bag fitted with a large star tip, pipe the dough onto the prepared baking sheet and bake for 15 – 20 minutes until crispy.
- In a small bowl combine sugar and cinnamon and dust the churros with the mixture
- Meanwhile prepare add strawberries and sugar into a bowl and mix until well combined, let sit for 20 minutes to release their juices
- Sandwich churros together with your ice of choice and the strawberries. Enjoy!
