Churro Ice Cream Sandwich

MasterChef SA contestant Melanie van der Merwe shares her family favourite recipe!

Ingredients:

  • For the churro dough:
  • 1 cup water
  • 1/2 cup unsalted butter
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • For the coating:
  • ½ cup granulated sugar
  • 1 tsp ground cinnamon
  • For the macerated strawberries:
  • 1 cup fresh strawberries, sliced
  • 1-2 tablespoons granulated sugar
  • To serve:
  • Ice-cream, of your choice
  • Macerated strawberries

How To Make Churro Ice Cream Sandwiches

  1. Preheat oven to 180°C and line a baking tray with baking paper.
  2. In a medium saucepan, combine water, butter, sugar, and salt.
  3. Bring to a boil over medium heat. Once boiling, add the flour all at once and stir continuously until the mixture pulls away from the sides of the pan and forms a ball, about 1-2 minutes.
  4. Remove from heat and allow the dough cool slightly, then add eggs one at a time, mixing well after each addition.
  5. Stir in vanilla extract until smooth. Transfer the dough to a piping bag fitted with a large star tip, pipe the dough onto the prepared baking sheet and bake for 15 – 20 minutes until crispy.
  6. In a small bowl combine sugar and cinnamon and dust the churros with the mixture
  7. Meanwhile prepare add strawberries and sugar into a bowl and mix until well combined, let sit for 20 minutes to release their juices
  8. Sandwich churros together with your ice of choice and the strawberries. Enjoy!
