Cinnamon Swirl Flapjacks

A sweet, swirly twist on a breakfast classic!

 

Ingredients:

For the flapjacks: 

  • 4 Tbsp butter
  • 2 Tbsp sugar
  • 2 eggs
  • 1 tsp vanilla extract 
  • 1¼ cup of flour 
  • 2 tsp baking powder 
  • 1 cup milk (may need more if batter is too thick)
  • Cooking spray 
  • Clover Whipped cream can
  • Blueberries and/or strawberries 
  • Golden syrup 

For the filling:

  • ⅓ cup butter (melted) 
  • ¾ cup sugar
  • 1 Tbsp ground cinnamon

How To Make Cinnamon Swirl Flapjacks

  1. Prepare the filling first. 
  2. In a medium bowl mix butter, sugar and cinnamon until well combined 
  3. Scoop filling into a small piping bag and set aside. (you want it to rest and thicken) 
  4. Prepare flapjack batter 
  5. In a medium bowl cream butter and sugar until light and fluffy. 
  6. Add in vanilla extract & eggs 1 at a time
  7. Mix in dry ingredients alternating with slowly adding your milk 
  8. Heat a non-stick pan on low heat.
  9. Spray with cooking spray 
  10. Pour ¼ cup of batter into the pan 
  11. Snip piping bag with cinnamon filling and squeeze a spiral of the filling on top of the flapjack 
  12. When bubbles begin to appear on the surface flip carefully with a spatula and cook until golden brown. 
  13. Make the rest of your flapjacks
  14. When ready serve with whipped cream, some berries and a drizzle of golden syrup
