2 cup cherry tomatoes, roasted 1 cup rice noodles, cooked 2 cups vegetable broh 1 onion, chopped 1 tsp ginger, grated 2 spring onions, chopped 2-3 cloves garlic, chopped ¼ cup fish sauce ¼ cup mirin ¼ cup rice win vinegar ¼ cup pineapple juice 1 tsp sugar 3-4 brid eye chilli, chopped Chilli oil for garnish Fresh coriander for garnish
Method:
Heat a glug of oil in a large pot and sauté the onion for a few minutes. Add in the ginger, garlic and chopped spring onion. Allow to cook for a few minutes. Add the vegetable broth, fish sauce, pineapple juice, mirin and rice wine vinegar. Bring to to a boil then reduce the heat to simmer for 10 minutes. /strain the broth into another pot . Simmer on a low heat
Scoop into serving bowl along with noodles and serve with cherry tomatoes, garnish with chilli oil, coriander, spring onions and more chilli.
Chefs Tip: You can add vegetables like broccoli and spinach to increase your veggie intake.
