Citrus & Sultana Scones with Vanilla Whipped Cream

Makes: 8 scones

Ingredients:
For the scones:
- 2 cups cake flour
- 1 Tbsp baking powder
- ¼ tsp salt
- ¼ cup sugar
- Zest of 1 lemon
- Zest of 1 orange
- ½ cup cold butter, cut into cubes
- ¼ cup sultanas
- 80ml fresh cream
- 80ml buttermilk
- 1 large egg, beaten
For the vanilla whipped cream:
- 1 cup fresh cream
- 2 Tbsp icing sugar
- 1 ½ tsp vanilla essence
How To Make Citrus & Sultana Scones with Vanilla Whipped Cream
- Preheat your oven to 180°C.
- Line a tray with baking paper.
- In a large bowl, whisk together flour, baking powder, salt, sugar, and the citrus zest.
- Add the butter and use your fingertips to rub it into the flour mixture until it resembles coarse crumbs and then stir in the sultanas.
- Make a well in the center and pour in the milk, cream and egg.
- Mix gently just until the dough starts to come together.
- Turn the dough onto a lightly floured surface.
- Pat into a disk, use a floured round cutter to cut out scones, place scones onto the prepared baking tray.
- Brush with milk and bake for 15 – 18 minutes until golden brown.
- While the scones cool slightly, whip the cream, icing sugar, and vanilla to soft peaks.
- Chill until ready to serve.
- Serve scones warm or at room temperature with a generous dollop of vanilla whipped cream.
