Budget Friendly Lentil Curry

A budget-friendly lentil curry made with simple, everyday ingredients!

Cooking time: 40 – 45 minutes

Ingredients:

  • 1 cup dried brown or red lentils (rinsed)
  • 1 Tbsp oil
  • 1 onion, finely chopped
  • 1 Tbsp garlic & ginger
  • 2 Tbsp mild curry powder
  • 1 can chopped tomatoes
  • 2–3 cups water or vegetable stock
  • Salt and black pepper to taste
  • 2 cups spinach, chopped

To serve:

  • Steamed rice

How To Make Budget Friendly Lentil Curry

  1. Heat oil in a large pot over medium heat.
  2. Add the onion and cook until soft (5–6 minutes).
  3. Add garlic and ginger and cook for another 1–2 minutes.
  4. Stir in curry powder.
  5. Toast for 30 seconds to release the aroma.
  6. Add lentils and chopped tomatoes.
  7. Stir well, then add 2½ cups of water or stock.
  8. Bring to a boil.
  9. Reduce heat to low, cover, and simmer for 25–30 minutes, stirring occasionally.
  10. Add more water if it gets too thick.
  11. Lentils should be soft and the curry creamy.
  12. Stir in spinach or kale during the last 5 minutes of cooking.
  13. Cook until wilted. Season with salt, pepper.
  14. Serve hot with steamed rice on the side.
