Budget Friendly Lentil Curry
A budget-friendly lentil curry made with simple, everyday ingredients!

Cooking time: 40 – 45 minutes
Ingredients:
- 1 cup dried brown or red lentils (rinsed)
- 1 Tbsp oil
- 1 onion, finely chopped
- 1 Tbsp garlic & ginger
- 2 Tbsp mild curry powder
- 1 can chopped tomatoes
- 2–3 cups water or vegetable stock
- Salt and black pepper to taste
- 2 cups spinach, chopped
To serve:
- Steamed rice
How To Make Budget Friendly Lentil Curry
- Heat oil in a large pot over medium heat.
- Add the onion and cook until soft (5–6 minutes).
- Add garlic and ginger and cook for another 1–2 minutes.
- Stir in curry powder.
- Toast for 30 seconds to release the aroma.
- Add lentils and chopped tomatoes.
- Stir well, then add 2½ cups of water or stock.
- Bring to a boil.
- Reduce heat to low, cover, and simmer for 25–30 minutes, stirring occasionally.
- Add more water if it gets too thick.
- Lentils should be soft and the curry creamy.
- Stir in spinach or kale during the last 5 minutes of cooking.
- Cook until wilted. Season with salt, pepper.
- Serve hot with steamed rice on the side.
