Classic Glazed Lemon Loaf
Light and pairs beautifully with a cup of tea!

Ingredients:
For the loaf:
- 1½ cups cake flour
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ¾ cup butter, softened
- 2 large eggs
- 1 Tbsp lemon zest
- ¼ cup lemon juice
- ½ cup milk
- 1 tsp vanilla essence
For the glaze:
- 1 cup icing sugar
- 2 – 3 Tbsp lemon juice
To serve:
- Lemon zest
- Mint sprigs
How To Make Classic Glazed Lemon Loaf
- Preheat your oven to 180°C.
- Grease and line a loaf tin with baking paper.
- In a medium bowl, whisk together flour, baking powder, bicarbonate of soda, and salt, then set aside.
- In a large bowl, use an electric mixer to beat the softened butter and sugar until light and fluffy.
- Beat in the eggs, one at a time, followed by the lemon zest, lemon juice, and vanilla essence.
- On low speed, add the dry ingredients in three parts, alternating with the milk (beginning and ending with flour).
- Mix until just combined.
- Pour the batter into your prepared pan and smooth the top.
- Bake for 45–55 minutes, or until a toothpick inserted in the centre comes out clean.
- Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Whisk together icing sugar and lemon juice until smooth.
- Drizzle over the cooled loaf and let it set before slicing.
Just a question, I saw on the video they added melted butter to the milk and then the dry ingredients, also they added sugar to the cake mix but the is no sugar listed in the ingredients.
