Steak wraps? Please, lettuce explain. If you’re looking for a refreshing way to serve those braai-ed steaks this weekend, a lettuce wrap with pesto is the only reason you need to light up those coals.
1 sirloin /Rib eye steak cooked to you liking 1 cup Clover Authentikos Greek style yoghurt
For the pesto 1/2cup olive oil 2 garlic cloves 2 cups of basil leaves 1/2 cup parmesan grated 4tbsp walnuts Juice and zest of 1 lime/lemon Salt and pepper to taste
Baby gem lettuce/butter lettuce Chilli crunch 1 red pepper, julienned 1 spring onion, julienned
Method:
Once steak has been cooked, allow to rest before slicing into thin strips. Combine all the ingredients for the pesto in a food processor and blend until smooth. Place the pesto into a bowl and mix through the Authentikos to form your pesto sauce. To a lettuce cup, add slices steak, Chili crunch, red pepper and spring onion. Spoon over some pesto sauce and serve.
Chefs Tip: This recipe can be made vegetarian by substituting the chicken stock for vegetable stock, and the chicken for mushrooms or tofu.
