Clover Authentikos Spinach & Feta Pies
If you have never tried cheesy and utterly decadent Spanakopita aka spinach and feta phyllo pies, you need to remedy that ASAP – and we’ve got the recipe for you! These delicious Greek style pastries will be on your table in under 30 minutes and your vegetarian family and friends will love you for it.

Ingredients:
2 knobs butter
1 red onion, thinly sliced
200g Swiss Chard spinach, chopped
200g Danish Feta, crumbled
1 tbsp fresh dill, chopped
1 tbsp Chermoula or basil pesto
½ cup Clover Authentikos yoghurt, plain flavour
100g ricotta
1 tbsp garlic powder
Squeeze of fresh lemon
Salt and lemon pepper to taste
3-4 Phyllo pastry sheets
1/2 cup melted butter
Egg wash for brushing
Mixed sesame seeds for garnish
Method:
Preheat the oven to 180C.
Melt the butter in a large pan and add in the onion. Saute for a few minutes, then add in the chopped spinach. Cook until wilted and season with salt, pepper and a squeeze of lemon. Place into a bowl and allow to cool.
Add in the feta, dill, Authentikos yoghurt, pesto, garlic power and a squeeze of fresh lemon, Season with salt and pepper and combine.
Place the phyllo sheets onto a surface and brush with butter. Make sure you have at least 2 layers of phyllo on top of each other.
Place the filling on one end of the buttery phyllo and roll up into a log. Brush with egg wash and place onto a greased baking tray. Sprinkle with sesame seeds and bake in the oven for 20-25 minutes, or until the phyllo pastry is golden in colour. You can also bake them in an air fryer for 10 minutes at 200C
Chefs Tip:
There are many variations to making spinach and feta pies so make it your own by adding some of your favourite ingredients. You could swop out the onion and use leeks instead.
Adding pesto to the mix gives this recipe a flavour burst!
