Clover Krush - Nicoles Ultimate Jalapeno Poppers

Speaking of flavour, as we celebrate the Women foodie favourites of Expresso show on this Women’s day, our Chef and Food stylist Nicole Snelling promises 100% flavour with her Ultimate Jalapeno poppers – packed with 100% taste!

Serves: 4
Time: 30 minutes

8-10 jalapeño peppers
1 Cup panko bread crumbs
3 eggs, beaten
½ Cup cream cheese, room temperature
½ Cup mozzarella, grated
handful chives, finely chopped
salt and pepper, to taste

Dipping sauce:
2 avocados, peeled and piped
1 Cup baby spinach
1 Cup fresh basil
1 red onion, chopped
½ Cup sour cream
½ Cup fresh coriander
¼ Cup olive oil
juice of 2 small lemons
2 Tbsp white wine vinegar
2 cloves garlic
1-2 green chilies,
salt and pepper, to taste


To prepare the dip, place all the ingredients into a blender or food processor and blend until smooth. Set the dip aside and serve with prepared jalapeno poppers.
To prepare the poppers, make a slit length ways down the center and using a teaspoon, gently scoop out the seeds.
Add the cream cheese, mozzarella, chives, salt and pepper to a mixing bowl and mix until combined.
Stuff each pepper with the cheese filling, making sure that the slit seals when pressed closed.
Bring oil to a medium- high heat.
Dip each of the stuffed peppers into the beaten egg and then into the panko bread crumbs. Repeat the process, ensuring each popper has been double coated.
Fry the poppers in the oil until golden brown and crisp.
Drain off any excess oil on some paper towel.
Serve popper with dipping sauce.

There are many delicious ways to prepare jalapeno poppers. Nicole loves to serve them with a healthy, flavoursome dip.
