Clover Bliss Baklava Cheesecake

Two classics combined in one dessert!

6 sheets phyllo pastry
½ cup butter, melted
2 cups pistachios
2 cups walnuts
pinch of salt
2 cups cream cheese, softened
1 cup Clover Bliss double cream yoghurt, plain flavour
1/2 cup honey or maple syrup
3 eggs
1 tsp vanilla essence

For the topping
½ cup pistachio nuts, chopped
½ cup walnuts, chopped
1 cup honey
Zest amd juice of lemon


Preheat the oven to 180C.
Brush the phyllo pastry with butter and fold in half. Place into a greased springform tin, overlapping the sides. Set aside. Blitz together the pistachios and walnuts with 2 tbsp butter and place onto the base of the phyllo pastry. Place into the fridge to set.

In a bowl, combine the cream cheese, Clover Bliss Double Cream yoghurt, honey, eggs and vanilla essence. Beat together until smooth and pour on top of the pistachio base. Bake in the oven for 40-45 minutes.

Mix together the topping ingredients and top on top of the cheesecake once cooled and ready to serve


Chefs Tip: You can use any of the Clover Bliss yoghurt flavours for this recipe – we’re using the plain flavour to keep it slightly traditional.
