Clover BLT Pasta Salad

It’s midweek and if cooking feels like its too much of a chore for you, take the struggle away by throwing a few fresh ingredients together, one being Clover Fresh milk and transform regular staples into something deliciously good!

Serves: 3-4
Time: 15 minutes

Ingredients:

300g cooked pasta of choice
4 slices streaky bacon or plant based bacon
1 cup mayo
1/3 cup Clover Fresh milk
1 tsp white wine vinegar
1 clove garlic, chopped
Handful fresh parsley, chopped
Salt and pepper to taste
1 cup cherry tomatoes, halved
2 cups Romaine Lettuce, chopped
½ small red onion, chopped
Parmesan shavings for garnish

Method:

Place the bacon into a dry pan and cook until the fat renders out and becomes crispy. Remove and chop up into chunks
In a small bowl, whisk together the mayo, Clover Fresh milk, vinegar, garlic and parsley. Season with salt and pepper.
Add the pasta, bacon, cherry tomatoes, lettuce and red onion to a large mixing bowl. Pour over the sauce and toss together
Serve with more parsley and parmesan shavings.

Chefs Tip:

  • A BLT salad is derived from the infamous bacon, lettuce and tomato sandwich 
  • You can substitute bacon for something more plant based to suit your dietary preferences
  • Pasta such as macaroni or penne works best for recipes like this
