Clover Classic Baked Feta Pasta

There is something magical that happens when you take feta with garlic and bake it in a hot oven. Stir in some tender orzo pasta and a touch of Clover Classic dairy snack for a creamy, dreamy easy family dinner.

Ingredients:

3-4 cloves garlic, kept whole
150g-200g feta (preferably soft)
1 tsp dried chilli flakes
1 tbsp dried oregano
½ cup olive oil
Salt and pepper to taste
¼ cup sundried tomatoes, chopped
200g baby spinach
300g orzo, cooked
Juice and zest of 1 lemon
1-2 cups Clover Classic dairy snack, plain flavour
Handful fresh herbs, chopped

Method:

Preheat the oven to 180C.
Add the garlic, feta, olive oil, chilli flakes and oregano to a baking dish. Season with salt and pepper and bake for 20-30 minutes.
Remove from the oven and mash up the garlic and mix with the feta. Add the spinach, sundried tomatoes and orzo pasta then mix in the juice and zest of lemon. Stir in the Clover Classic dairy snack whilst still warm and garnish with fresh herbs.

Chefs Tip:

  • Make sure the orzo pasta is still hot when mixing into the mashed feta and garlic.
