Clover Breakfast Frittata

Thanks to the Moo freshness of Clover Fresh milk, every day is a day to enjoy the freshest milk, even if its used to freshen up some dishes. Today we show you how to put those leftover veggies wilting in your fridge to good use in our Clover Fresh milk Fridge Clean out frittata.

Ingredients:

1 onion, chopped
1 red pepper, chopped
2 rashers bacon (optional) chopped
1 zucchini or half broccoli head, chopped
1 cup cherry tomatoes
2 cups spinach, chopped
4 large eggs, beaten
1-2 cups Clover Fresh milk
Handful fresh basil or parlsey, chopped and for garnish

Method:

Preheat the oven to 160C
Heat a glug of oil or the last bit of butter from your fridge in a large saucepan and sauté the onion with the red pepper and bacon.
Add the veg to the pan, season with salt and pepper and toss to cook for a minute. Place the veggies into an oven safe dish.
In a separate bowl, mix together the eggs and Clover Fresh milk. Season with salt and pepper and pour over the slightly cooled veg. You can also scatter over some left over cheese bits you have. Stir in the basil and bake for 20-25 minutes, until slightly golden
Serve with fresh herbs for garnish.
