Sweet Potato Focaccia Recipe
Focaccia is an Italian style bread that is the next best thing since sliced bread. It pairs perfectly well with most meals or can be used for your favourite sandwiches.

Ingredients:
• 3 ½ Cups of flour
• 1 tbsp yeast
• 2 tsp sugar
• 1 tbsp salt
• 1cup of steamed mashed sweet potato
• 1/2- 1 cup of hot water
• 1 tbsp of thyme leaves
• ¼ cup Clover Butro
• 2 discs of feta cubed
• 1 sweet potato sliced into half moons
How To Make Sweet Potato Focaccia
1. Pre-heat oven to 180
2. In a mixer combine the flour and salt, stir so that the salt is evenly mixed through before adding your yeast. Add in half of the yeast.
3. In a jug combine the water, sugar the rest of the yeast and allow the yeast to activate for about 4 minutes.
4. Add the activated liquid to the flour along with the melted Butro, the mashed sweet potato and mix for about 8 mins, for a sticky smooth dough forms.
5. Cover the dough with plastic and allow it to proof for 1 hour. Once doubled in size place the dough into your rectangle tin and allow it to proof once more for 20-30 minutes.
6. Drizzle over some olive oil and make indents into the dough using your fingers, top with the feta, sweet potato slices and a sprinkling of sea salt and thyme leave. Bake for 30-35 minutes. Slice and serve with Clover Butro.
