We all have that one favourite pasta salad for a braai or even just a midweek lunch.
Ingredients:
Ingredients 2 cups basil leaves 1 cup baby spinach 2 garlic cloves, roughly chopped Handful fresh parsley 1/3 cashew nuts 1/3 grated parmesan cheese salt and pepper to taste ¾ cup olive oil juice and zest of 1 lemon 1 cup cream 500g cooked pasta of choice (spirals/penne) 3-4 Clover Feta cheese discs, crumbled 2 cups Vine or Cherry tomatoes Method
Method:
Make the pesto by blending together the basil, spinach, garlic, parsley, cashew nuts and olive oil. Season with salt and pepper.
Heat a glug of oil in a large saucepan and add in the pesto. Pour in the cream and stir through the pasta, feta and tomatoes. Mix until well combined and squeeze over fresh lemon juice and zest. Serve with extra feta cheese.
Chefs Tip: You can use any of your favourite Clover Elite cheese variants in this recipe – like adding Tussers to the creamy pesto mix. Add protein like chicken to the salad for a meaty option
