Clover Classic Activated Charcoal Flapjacks

Activated Charcoal has been seen and blueticked in the food scene for some time now – and today, we’re making it a classic! Not only does it transform the appearance of food, its also said to have many health benefits associated with it – so we’re trying it before we knock it, with the Clover Classic actvated charcoal flapjacks

Serves: 4-5
Time: 20 minutes

Ingredients:

2 cups flour
1 tsp cinnamon
1 tsp baking powder
2 tbsp maple syrup
1 tsp food activated charcoal
2 tbsp Clover Classic fat spread, melted
1 cup water
1 tsp vanilla essence

For the compote
1 cup blackberries, blueberries or raspberries
2 tsp maple syrup

For layering
1 cup whipped cream
½ cup ricotta cheese
Fresh mint for serving

Method:

To a large mixing bowl, mix together the flour, cinnamon, baking powder, activated charcoal. Make a well in the centre and add in the maple syrup, melted Classic fat spread, vanilla essence and water. Stir to combine until a smooth batter forms.

Heat a non stick pan with a little oil and add a ladle full of the batter to the pan. Cook until firm and flip over to cook for another minute or 2.

Make the compote by adding the berries to a saucepan along with the maplye syrup and a dash of water. Cook until a thick syrup forms and some of the berries still whole. Fold together the whipped cream and ricotta
Layer the pancakes with the cream and compote to serve.

Chefs Tip:

Activated Charcoal is said to remove toxins from the body, alleviate bloating and lower cholesterol levels 

You can use it in various dishes such as this, that will make it better to consume when used with other ingredients
