Clover Classic Breakfast Flatbread

Flatbread is delicious with any of your favourite breakfast choices and they’ll be just as good with your favourite morning cuppa.

Serves: 2-3

Ingredients:

2-3 mini naan breads
200g breakfast sausage, casing removed
1 cup mushrooms, sliced
1 cup spinach, wilted
2 poached or sunny side up eggs

For the sauce
1 cup Clover Classic dairy snack, plain flavour
1 tsp chili flakes
2 tbsp fresh dill, chopped
Salt and pepper to taste
Chili oil for drizzling

Method:

Heat a glug of oil in a pan. Break the sausage up in the pan as you cook it. Once cooked, remove from pan and fry the mushrooms. Season with salt and pepper.
In a bowl, combine the ingredients for the sauce and mix together.

Assemble the flatbread by adding the sauce to a flatbread. Top with wilted spinach, eggs, sausage mince and mushrooms. Dollop with more classic sauce and drizzle with chili oil to serve.

Chefs Tip: Add any of your favourite breakfast toppings to the bread. Salmon strips makes for an impressive weekend brunch style flatbread.
