Clover Classic Caesar Salad with Pizza Croutons

Whether you crave a pizza but should rather opt for a salad, the Caesar salad with pizza croutons says you can have both!

Ingredients:

Dressing:
5 anchovies fillets
1 teaspoon Dijon mustard
2-3 tbsp fresh lemon juice
1 garlic clove
2 large egg yolks
4 tbsp grated parmesan
1/4 cup sunflower oil
90 ml olive oil
Salt and pepper to taste:

Croutons
5 cocktail pizza bases
2 tbsp Clover Classic Fat spread, melted
Handful fresh parsley, chopped
1 tbsp dried oregano
10 mini salami rings
1 cup mozzarella cheese grated
1/2 tomato Passata

Romain lettuce

Method:

For the dressing combine all the ingredients in a blender and combine to a smooth consistency.
For the pizza croutons, place pizza bases on a baking sheet. Combine the Clover Classic fat spread with the parsley and oregano. Apply a liberal amount of Passata on the pizza base, top with mozzarella and salami and drizzle over the Clover Classic herb sauce. Bake for 12 minutes or until the pizza’s bases have slightly browned.
To assemble, toss the Romain lettuce with the Ceasar salad dressing and place onto your serving platter. Top with the sliced pizza(resembling mini pizza slices) and serve.

Chefs Tip: You can add additional ingredients like chopped nuts for a crunchy texture.
