Sloppy Joe Bowl

There are so many great, classic flavours to an amazing sloppy joe, It’s perfect for a busy weeknight or  scrumptious way to wake up the tastebuds! 

Serves: 4-5
Time: 30 minutes

Ingredients:

500g beef mince
1 onion chopped
1/2 green pepper chopped
4 gloved of garlic minced
2-3 tbsp worstershire sauce
1 tbsp yellow mustard
1/2 tsp chilli flakes
3 tbsp oil
250 ml tomato passata
2 tsp sugar

Dressing
3/4 cup Clover Nolac dairy snack
1tbsp finely chopped coriander
1 lime juiced
Salt and pepper

To serve
Thinly sliced jalapeno, grated sharp cheddar, roasted sweet potato , cooked quinoa/ barley or couscous.

Method:

In a large pot add in oil, onion and green pepper and cook until translucent. Add in the garlic and allow to become fragrant. Add in the beef mince and allow to brown in the pot. Add in the worstershire sauce, mustard, chilli, tomato, and share and allow it to cook on for 15-20 minutes until it’s a thick saucy consistency, season to taste.

For the dressing, add all your ingredients to a bowl and mix well

To assemble, place your cooked grain at the bottom of your serving bowl, in one corner spoon over your sloppy Joe mince mixture in the other, your roasted sweet potato. Add jalapeno slices, grated sharp cheddar, top with your coriander dressing and enjoy.

Chefs Tip: You can add as many toppings to the bowl, like grilled or steamed veg.
