Cheese and potatoes stay a winning combo!
Serves: 4 – 5
Time: 25 minutes
4 cups mashed potatoe
1 cup cheddar cheese, grated
2 tbsp Clover Classic dairy snack
Handful fresh parsley, chopped
1 cup flour
2 eggs, beaten
1 cup panko breadcrumbs, seasoned
Oil for frying
For the dip
1 cup Clover Classic dairy snack, plain flavor
2 tbsp red pepper or sundried tomato pesto
Squeeze of fresh lemon
Salt and pepper to taste
Place the mashed potato into a large mixing bowl and add the Clover Classic dairy snack, chopped parsley, cheese and season with salt and pepper.
Place the flour, eggs and breadcrumbs each into separate bowl.
Scoop out tablespoons of the mash mixture and shape into balls or croquette shapes. Coat the croquettes in the flour, then egg and finally the breadcrumbs.
Repeat until all the mash is used up. Heat oil for frying and fry the croquettes until golden brown in colour.
Mix together the ingredients for the dip and serve with croquettes.
Chefs Tip: You can add different types of herbs and flavours to the croquettes, like chopped bacon or you can even sneak in some veg
