Clover Classic Creamy Tuscan Ravioli

Italian cuisine is always a great idea for midweek dinner meal inspiration. And if you have been shying away from the Classic Ravioli, today we show how you can enjoy the creaminess of this retuarant style dish in the comfrot of your home.

Serves: 3-4

X1 pack ready made ravioli
2 shallots, chopped
2 cloves garlic, chopped
1 cup cherry tomatoes, halved
¼ cup sundried tomatoes, chopped
1 tbsp paprika
1 tbsp dried herbs
Handful fresh parsley, chopped
Handful fresh basil, chopped
2 cups baby spinach
½ cup vegetable stock
1 cup cream
½ cup Clover Classic dairy snack
Squeeze of Fresh lemon
Parmesan for garnish


Cook the ravioli according to pack instructions.
In a large pan, heat a generous knob of butter or olive oil. Add in the chopped shallot and garlic, along with the cherry tomatoes, sundried tomatoes, paprika and herbs and sauté for a minute. Stir in the stock and cream, season with salt and pepper and allow to simmer for a few minutes. Add in the cooked ravioli, baby spinach and scatter over some of the parmesan and stir in the Clover Classic dairy snack. Cook for a minute, squeeze over fresh lemon and serve with more parmesan and garnish with fresh herbs.
