Clover Elite Cheese Balls in Tomato Sauce

Ingredients:
For the sauce
2 tbsp olive oil
1 clove garlic, sliced
1 tin chopped tomatoes
Fresh basil leaves
1 tsp dried mixed herbs
Salt and pepper to taste
For the cheese balls
2 eggs
250g Clover Tussers Cheese
100g Clover Cheddar cheese
1 clove garlic, chopped
Handful fresh parsley, chopped
Salt and pepper to taste
1 stale bread, crust off (ciabbatta)
½ cup water
oil for frying
Method:
To make the cheese balls, place eggs, cheese, garlic, parsley and salt and pepper into a large mixing bowl.
Slice off pieces of the bread and slightly dampen in the water. Crumble into the cheese mixture and add more as needed. Mix to combine and roll into balls. Add more dry bread if the mixture it too moist.
Fry off in oil and drain excess oil on paper towel.
To make the sauce, heat a glug of oil in a large saucepan and add in the garlic. Stir in the chopped tomatoes, herbs and season with salt and pepper. Allow to simmer for a few minutes. Place the cheese balls into sauce and garnish with fresh basil to serve.
