Clover Classic Crispy Chickpea Bowl with Lemon Tahini Dressing

Serves: 2-3
Time: 15 minutes
Ingredients:
1 tin chickpeas, drained
¼ cup olive oil
1 tbsp smoked paprika
1 tbsp chilli flakes
Salt and lemon pepper to taste
100g broccoli florets or tenderstems
100g green beens
1 cup cooked couscous or quinoa for serving
For the lemon tahini dressing
½ cup Clover Classic dairy snack, plain flavor
2 tbsp tahini
Juice of 1 lemon
1 tsp honey
Salt and pepper to taste
Method:
Place the chickpeas, broccoli and green beans into a bowl and drizzle over the olive oil, paprika, salt and lemon pepper. Toss together and place into an airfryer at 180C for 15-20 minutes.
Alternatively grill in oven at 200C for 10-15 minutes.
Mix together the ingredients for the lemon tahini dressing until smooth. Assemble the couscous in a bowl, with the veggies and chickpeas and drizzle over the lemon tahini dressing. Garnish with fresh chopped parsley
Chefs Tip:You can assemble the bowls with as many veg as you prefer and explore with different types of grains like quinoa or sorghum
