Clover Classic Crispy Oyster Mushroom Pancakes

A delicious meat-free version that everyone will enjoy!

400g King oyster mushrooms
3 tbsp corn flour
2 tbsp Chinese Five spice
Salt and pepper to taste
Oil for shallow frying
½ cucumber, julienned
Few spring onions, julienned
100g Hoisin sauce
¼ cup Clover Classic Mayo
Ready made pancakes for serving (Chinese pancakes)


Tear the mushrooms into shreds and place them into a bowl. Sprinkle over the corn flour, five spice, salt and pepper and toss together.
Heat the oil in a large pan and fry the mushrooms in batches until crispy. Drain the excess oil in towel paper.
Mix together the hoisin sauce and Clover Classic mayo. Assemble pancakes with the sauce, crispy mushrooms, cucumber, spring onion to serve.

Chefs Tip: These are typically served with rice pancakes but you can use regular, thin pancakes too.
