Clover Classic Custard Citrus Cake

Celebrate citrus season!

Serves: 5-6
Time: 40 – 50 minutes

2 cups flour
Pinch of salt
1 tsp baking powder
½ cup butter at room temp
1 cup sugar
2 large eggs
Juice and zest of 1 lemon
Juice and zest of 1 orange
1 tsp vanilla essence
½ cup Clover Classic Custard
Syrup lemon/orange slices for garnish
Icing sugar for dusting

For the syrup lemon and orange slices
Thin sliced orange and lemon
1 cup sugar
1 cup water



Preheat the oven to 180C
In a mixing bowl, beat the butter and sugar together until pale in colour and beat in the eggs 1 at a time. Whisk in the juice and zest of the lemon and orange, as well as the vanilla essence and Clover Classic Custard. Sift in the flour, salt and baking powder and fold together.
Pour the batter into a greased baking tin and bake for 40-50 minutes or until a skewer comes out clean.

For the syrup: Bring the water and sugar to a boil in a saucepan and add in the sliced lemon and orange. Cook for 10-15 minutes and transfer to a wire rack to cool until ready to serve 

Garnish with syrup lemon and orange slices and dust with icing sugar. Serve with Clover Classic Custard.
