Ingredients:
For the dough
2 cups of flour sifted
2 teaspoons of yeast
Pinch of salt
1/4 cup sugar
2 tbsp butter
1 egg
150 ml milk
For the filling
1/8 cup cinnamon
1/3 cup butter softened
1/8 cup maple syrup
1/4cup brown sugar
1/2 cup pecans toasted and finely chopped
Clover Classic Custard for serving
Method:
Pre-heat the oven to 180°C.
In a large bowl combine the flour, salt, and half the sugar. Gently heat the milk in a saucepan or in the microwave until it’s warm to the touch, be careful to heat it too long. Add in the yeast to the milk along with the remaining sugar and allow it to activate, this will take 2-3 minutes. Once activated add the yeast mixture along with the egg to the dry ingredients and mix to form a smooth dough. Add the softest butter and work it through. Cover the dough and allow it to proof until it doubles in size. Flour a surface and roll out the dough to form a large rectangle. Combine the butter, sugar cinnamon and maple syrup for the filling, it should be paste like. Spread the filling to cover the rectangle. Evenly sprinkle over the nuts, roll up the dough to form a long sausage like shape. Using a sharp knife, slice the roll in to equal portions of about 5 cm and tightly place it onto a greased skillet. Cover the the rolls and allow to proof once more for about 15 minutes. Brush the rolls with milk and bake for 25-30 minutes. Serve with Clover Classic custard.
