If there is anything that screams summer, its the delight of enjoying a juicy peach and when having fun in the sun for the day at the park or on a picnic its only suitable to have some ice cream to go with it.
Knob of butter 2-3 peaches, peeled and sliced ¼ cup maple syrup ½ tsp cinnamon 100g short crust pastry, baked and roughly crumbled 1 cup cream cheese 2 tbsp condensed milk 1 cup Clover Classic Custard 1 tbsp vanilla essence 2 cups cream, whipped to stiff peaks
Method:
Melt butter in a saucepan and add in the peaches with the maple syrup and cinnamon. Cook for 5-10 minutes.
Whip together the cream cheese, condensed milk, Clover Classic Custard and vanilla essence until smooth then fold in the cream. Place into a dish alternating between the short crust pastry and peaches .Top with remaining peaches and short crust pastry and drizzle on the peach juices. Freeze until set and serve as desired.
