Clover Classic Grilled Lamb Riblets

Nothing beats a classic braai and if you looking to impress dad with some delicious flavours this father’s day, our Classic Marinated lamb riblets tick all the flavor boxes and may be slightly more impressive than cotton socks!

For the lamb riblets marinade
1 tbsp ground cumin
1 tbsp smoked paprika
2 cups Clover Classic dairy snack, plain flavour
2 tbsp harissa/chimmichurri paste
Salt and pepper to taste
Juice and zest of 1 lemon
800g lamb riblets

For the dressing
1 cup Clover Classic dairy snack, plain flavor
Handful fresh mint, chopped
Handful fresh coriander, chopped (optional)
2 spring onions, chopped
Squeeze of fresh lemon
1 tsp garlic powder
Salt and pepper to taste

Fresh rocket salad leaves for serving


Place the marinade ingredients into a bowl along with the lamb riblets and allow to marinade for at least 20 minutes – overnight is best.
Leave at room temperature before cooking for 20 minutes. Grill over medium heat coals until the lamb riblets are cooked to your liking.
Mix together the ingredients for the dressing and drizzle over lamb riblets. Serve with fresh rocket
