Jungle Oat Bran Muffins 3 Ways
The humble bran muffin gets spruced up with three different flavours!
Serves: 18 (6 of each flavour)

Ingredients:
Muffin Base
250 ml double cream yoghurt, plain
3 cups Jungle Oat Bran
1 tsp vanilla essence
2 large egg
160 ml canola oil
1 ½ cups brown sugar
2 cup self-raising flour
Cranberry & Orange flavour
1/4 cup dried cranberries plus extra for topping
zest from one orange
Blueberry flavour
1/4 cup of blueberries, freeze dried, plus extra for topping
1 tsp cinnamon
Choc-Chip flavour
2 tsp cocoa powder
¼ chocolate chips, plus extra for topping
Method:
Preheat oven on 200°C. In a small bowl, mix the yoghurt, Jungle Oat Bran and the vanilla essence and set it aside for a few minutes to soak in well together. Meanwhile, in a large bowl, beat the egg and the brown sugar together for 30 to 40 seconds until well blended. Add the oil to the egg and sugar mixture and beat again. Add the soaked Jungle Oat Bran mixture into the egg and sugar mixture and beat together until well blended. Divide batter between 3 medium sized mixing bowls. Add the different ingredients for each flavour to each of the three bowls and gently mix each batter until fully combined. Top with some of the reserved ingredients so that once baked, you are able to tell the flavours apart. Line a muffin tray with muffin liners and fill each section almost full with batter. You should be able to get 6 muffins out of each flavour defending on the size of the muffin tin. Bake for 15 to 20 minutes until baked. Serve warm with softened butter
Chefs Tip: This can serve as inspiration to change up your bran muffin and try different flavours! How about adding carrots, bananas, nuts or seeds?
