Clover Classic Mayo Breakfast Egg Boats

Breakfast recipes can be one of life’s simplest of pleasures, like with our Classic Mayo egg boats.

Serves: 3-4
Time: 20 minutes


1 large baguette or French loaf, sliced in half lengthways
4 large eggs
3 spring onions, chopped
2 cloves garlic, chopped
1 red bell pepper, chopped
4-5 streaky bacon
½ cup Clover Classic Mayo
½ cup cream or sour cream
Handful fresh basil, chopped
Salt and pepper to taste
1 cup grated cheese of choice


Preheat the oven to 180C
Cook the streaky bacon until crispy and chop up.
In a mixing bowl, mix together the eggs and cream. Add in the spring onions, garlic, bell pepper, Classic mayo, basil, chopped bacon, half of the cheese and season with salt and pepper. Mix until combined.
Press down the centre of each half baguette, making a deep indent for the filing. Pour in the filling and top with remaining cheese.
Bake for 20-25 minutes or until the filing is cooked golden in colour.
Serve whilst warm

If you needing to use up leftover veg, this would be the perfect recipe

You could also include smoked salmon or any of your favourite cold meats into the filling.
