Clover Classic Mayo Grinder Sandwich

Much like a sub, the grinder sandwich is loaded with meats, cheese and a lettuce salad.

For the salad
½ small iceberg lettuce, chopped
¼ red onion, thinly sliced
1/3 cup piquante peppers, chopped
1/2 cup Clover Classic Mayo, 2
1 tsp garlic powder
1 tsp dried Italian herbs
1 tsp red wine vinegar

for the sandwich
1 knob butter
1 French loaf, cut in half then sliced lengthways
Cheese slices (cheddar)
Grated mozzarella cheese
¼ cup grated parmesan cheese
½ cup salami slices
3-4 Turkey/ham/chicken slices
prosciutto (optional)
Streaky bacon, cooked


Add a knob of butter to a pan and toast the inside of the cut French loaf.
Make the salad combining all the salad ingredients together.

Layer the sandwich like a sub by layering the cheese, cold meats and add the salad last. Slice and serve.

Chefs Tip: Use any bell pepper for the salad filling – even pickles will add more flavour.
