Clover Classic Mayo Potato skin burger
Everyone loves a good classic burger that is often accompanied by a potato of some kind. But what if you combine the burger and the potato into one thing?

2 large potatoes
2 thick burger patties
1/2 cup grated cheese
2 spring onions finely chopped
1/2 tsp chilli flakes
1/2 cup Clover classic mayo
Salt and pepper to taste
2 tbp olive oil
Pre heat oven to 180 °C Half the potatoes season with salt, pepper,rub with olive oil and cover with foil. Bake for 30 minutes or until tender. In a bowl combine the spring onion, Clover classic mayo, chilli, salt and pepper. Cook the patties to your liking.
Once the potatoes are tender remove the center of the potatoes and place the hollowed out potato skins in the oven until golden and crisp for about 10 more minutes. Place the sauce into the cavity, top with the cooked burger patties and top with the other half potato.
Chefs Tip: You can use either chicken or even make a fish version of this burger.
