Spending time in the kitchen need not be a chore, when you can whip up something as easy as a delicious roast red pepper dip for a casual weekend mezze.
For the red pepper sauce 2 red peppers 2/3 cup breadcrumbs 1/3 cup walnuts, toasted 1 clove garlic 2 tbsp olive oil Juice and zest of 1 lemon 1 tsp ground cumin 1 tsp paprika 1 tbsp chilli flakes 1 cup Clover Classic dairy snack, plain flavour salt and pepper to taste
For the mezze Small cucumbers, sliced Carrots sticks Cherry tomatoes, halved Radishes Pita bread/chips Olives Cheese (Feta cheese)
Method:
Make the red pepper sauce by roasting the red peppers. Alternatively, hold them in between tongs over a gas burner. Once charred, place into a zip seal bag and allow to steam. After 10 minutes, peel the skin and place into a blender along with the rest of the sauce ingredients and blend to your desired consistency. Season with salt and pepper and stir through the Clover Classic dairy snack. Pour into a bowl and serve with mezze platter.
