Golden Cloud Smoked Salmon Blinis with Sparkling Wine

A delicious homemade blinis topped with silky cream cheese, avocado cubes, smoked salmon rosed and a touch of dill make for a flawless finish to a high tea.

Ingredients:

150g Golden Cloud Cake Flour
3 tsp baking powder
2 tsp castor sugar
180ml milk
1 egg
50g butter, melted
100g smoked salmon ribbons
250g cream cheese
1 tsp lemon zest
Squeeze of lemon
1 avocado, diced small
10g fresh dill

To serve:
Non-alcoholic sparkling wine

Method:

In a large bowl, sift the flour, baking powder, sugar and a pinch of salt.
In a medium bowl, whisk together the milk, egg and half the melted butter.
Gradually add in the wet ingredients into the dry ingredients and mix until smooth. Place the batter in the fridge for 30 minutes.
While the batter chills, place the cream cheese in a bowl and whip until soft. Add the lemon zest, squeeze of lemon, salt and pepper and whip to combine. Transfer into a piping bag fitted with a large round nozzle.
Heat a large non-stick pan over medium heat. Lightly brush the pan with a small amount of the remaining butter.
Add one tablespoon of batter to the pan, and cook for 1 minutes until small bubbles appear on the surface.
Turnover and cook for a further 30 seconds,
Repeat with the remaining butter and batter
To serve, top the blinis with the whipped cream cheese, cubes of avocado, smoked salmon roses finished off with dill.

Chefs Tip: Ready in minutes, you can have anything from a two-tiered cake to cupcakes with the simple addition of a few ingredients.
