Clover Classic Pancake spaghetti with stone fruit compote

During the summer days, our tables are brightened with various kinds of stone fruit and that gives us even more reason to celebrate them.

Serves: 2-4

Ingredients:

300g Flapjack/pancake mix
600ml milk
2 eggs
60ml Clover Classic Fat spread, melted

Compote:
2 Cups of stone fruit of your choice, chopped up
½ Cup sugar
1 tsp vanilla essence
Pinch of salt

Method:

Add the melted fat spread, oil and milk into a mixing bowl and mix until well combined, add the pancake mix and slowly whisk until smooth. Add the mixture into a squeezy bottle. Allow the mixture to stand for a few minutes before using.
In the meantime, prepare the compote by adding the ingredients into a sauce pot and bring to a simmer. Allow the compote to simmer for 20-25 minutes until thickened.
Preheat the pan to medium heat and spray with a non-stick cooking spray.
Squeeze a spiral of batter in a pan making sure the batter doesn’t touch. Allow to cook through for 2-3 minutes and then using a spatula and toss the “spaghetti” and then place into a serving bowl.
Repeat until all the batter has been used and serve the pancake spaghetti with a extra dollop of margarine and stone fruit compote.
