Clover Classic Phyllo Samoosas with Mayo Dip

Get the irresistible flavour of samosas without the frying! Phyllo pastry makes an ingenious wrapper for our take on the popular snack – mince filled samosas

500g beef or chicken mince
1 onion, chopped
2 tsp crushed garlic and ginger
1 tbsp ground cumin
1 tbsp paprika
½ tsp ground cinnamon
1 tsp chilli powder
Salt and pepper to taste
Handful fresh coriander, chopped
½ cup frozen peas
6-7 phyllo pastry sheets, defrosted
½ cup melted butter
2 tbsp sesame seeds

For the Classic Mayo dip
1cup Clover Classic mayo, 2 or 3
Juice and zest of 1 lemon
1 tbsp sweet chilli sauce
2-3 mint leaves, chopped
Salt and pepper to taste


Heat a glug of oil in a large pan. Add in the onion and sauté for a few minutes. Add in the mince and break up in the pan, then sprinkle over the spices and season with salt and pepper. Stir in the chopped coriander and a dash of water if the mixture appears dry. Stir in the peas.
Allow to simmer for a few minutes and set aside to slightly cool. Place the phllo sheet onto a surface and slice in half, into long strips. Brush with melted butter. Place 1-2 spoonfuls of mixture at the top of the strip, fold over to form a triangle and continue folding until you have used the whole strip, pressing down the edges. Brush with more melted butter and sprinkle sesame seeds on top. Bake for 4-5 minutes in a preheated airfryer at 180C, or until golden brown in colour.

Mix together the ingredients for the Classic mayo dip and serve with samosas.
