For the sauce 80ml lemon juice 3 tsp corn flour 1 cup boiling water 1/3 cup white sugar

Method:
Preheat the oven to 180C and grease an oven friendly serving dish In a large bowl, beat the butter, sugar and egg until well combined. Stir through the lemon zest, juice and Clover Classic Custard. Sift in the flour, baking powder and salt. Gently stir through the milk, be careful not to overmix. In a jug, stir together the lemon juice and cornflour until combined, then stir in the boiling water. Sprinkle the sugar over the top of the pudding, then drizzle the lemon sauce over the pudding. Bake for 30-40 minutes minutes. Dust with icing sugar and serve with Clover Classic Custard
